Juanachute is the name of the Farm and Mill operation, owned by Luis Anastacio Castro (or “Tacho” like his friends and family call him). Juana and Chute were the nicknames of Tachos’s great-great grandparents, who are still remembered dearly by the new generations and also served as an inspiration to name the micro-mill. In Juanachute there is vast knowledge of several processing methods, and beyond that, they have determined the perfect process for each of their farms and plots. For this particular farm in Tarrazu it has been proven by the Juanachute team that “Anaerobic” process brings out the most attributes in the cup.
