Fazenda Lagoinha is now managed by two partners, Carlos Eduardo Canellas da Cunha and Matheus Avelar. They have a long history of partnership and investment in various ventures, but it was now in coffee farming that the duo gained even more visibility. They purchased the farm in 2019 and have since invested in transforming the farm’s production into high-quality coffee production.
Located in Carmo da Cachoeira, in the Três Corações region, in the south of Minas Gerais, the farm has been producing coffee for over a hundred years, but always focused on commercial coffee production. Now, the partners, accompanied by Matheus’ wife, Tatiana Reis, have changed the entire way coffee production was done on the farm. Over the last tree years, Tatiana has taken over the management of the coffee operations on the farm. She made also a large process of employee training, causing a change in the way of thinking about the production of specialty coffees. They have invested in proper crop management, post-harvest processes and modern structures.
The farm makes all fermented coffees using Selvatech yeast, developed with wild yeast from Fazenda Irmãs Pereira, one of the main specialty coffee farms in Brazil. Selvatech brand yeast has shown impressive results and helps boost the coffees profile without altering their flavors. Coffees are fermented aerobically and anaerobically and with different fermentation times.
