Juanachute is the name of the Farm and Mill operation, owned by Luis Anastacio Castro (or “Tacho” like his friends and family call him). Juana and Chute were the nicknames of Tachos’s great-great grandparents, who are still remembered dearly by the new generations and also served as an inspiration to name the micro-mill. In Juanachute there is vast knowledge of several processing methods, and beyond that, they have determined the perfect process for each of their farms and plots.
Juanachute began processing cherries in 2012, and the idea came from “Tacho’s” eldest son “Tachillo”. The operation processes around 300 bags per year from their different farms. Tacho and his sons really enjoy experimenting and testing different processes on their farms in order to determine which is the best to apply in each case.
