This regional coffee is transported to Bella Vista for wet and dry milling, where lots are separated by harvest date, variety, and altitude. The coffee then undergoes depulping, fermentation, washing, and drying, either on patios or in greenhouses. The controlled greenhouse drying allows for gradual and more uniform drying, contributing to better cup quality.
After resting in the warehouse, the coffee is dry milled, sorted by size and weight, and electronically color-sorted to remove defective beans. This careful process ensures high-quality coffee from the Antigua region.
